Easy Spring Mocktail Recipe: Blueberry Elderflower Lemonade
What better way to cool off this summer than fresh-squeezed lemonade?
How about lemonade infused with perfectly ripened blueberries with a hint of elderflower?

Ingredients:
Elderflower Syrup
3 Cups Sparkling Mineral Water
Blueberries
2 Cups Fresh Lemon Juice (Approx 10 Lemons)
Lemon for Garnish
16 Mint leaves (2 per glass)
Ice
Instructions:
Step One: If it's available to you, I highly recommend you pick fresh blueberries at your local berry farm. We love not only knowing where our food comes from but getting to know the people who grow our food. So take your time exploring the farm and getting to know the farmers. Plus, fresh blueberries are the best!
Step Two: Set your ingredients out. Pour lemon juice in a large pitcher.
Step Three: Cut your extra lemon into nice thin slices and muddle 1/2 cup of blueberries. Add to pitcher. Add in the mint leaves, approximately 2-3 leaves per intended glass. Mix well so it doesn’t settle. Add Elderberry Syrup to taste (think 1-2 TBSP per glass)
Step Four: Finally, once you’re ready to serve, fill up the rest of your pitcher with sparkling mineral water. The sparkling water will give a little more kick to the lemonade. Be sure to taste test as you go. Garnish each glass with a slice of lemon, a few blueberries and 2 leaves of mint to complete the drink. Enjoy sipping and chatting over this delicious warm-weather treat!

Feel free to make your own elderberry syrup. If you’re like me and definitely don’t have time for that at all, here’s a great option.
