Grilled Peaches with Honey Goat Cheese

Need something yummy to do with those peaches from our post this morning? Try out this recipe for grilled peaches with honey goat cheese today! 

  • 4 large ripe peaches
  • 2 tablespoons melted butter
  • 1/2 cup of chopped pecans
  • 3 table spoons of honey
  • 4 ounces of goat cheese, softened
  • Sea Salt to taste
  • 1 tablespoon of chopped, fresh mint

For the pecans, preheat oven to 250 degrees. On a baking pan, mix pecans and 2 tablespoons of honey and spread evenly on the baking pan. Add a pinch of salt to pecan mixture and bake for 15-20 minutes or until golden brown. Remove pecans from oven and let cool.

For the grilled peaches, heat grill to medium heat. Cut peaches in half and remove pits. Brush 2 tablespoons of melted butter on the inside of each peach and place the peaches face down on grill for 5-10 minutes or until peaches have softened and have grill marks on the inside. Remove from grill and set peaches aside. 

To assemble mix softened goat cheese and 1 tablespoon of honey in a bowl.  Once peaches have cooled some, lay the peaches grill marks up, and place goat cheese in center of the peach - about 1-2 tablespoons of goat cheese per peach. Crush up the hardened pecan crunchy mixture, and sprinkle on top to coat the goat cheese. Evenly divide and sprinkle the chopped mint amongst the the peaches. Add some sea salt to taste on each peach and drizzle some honey over each peach for the finishing touch!
